How does using the layer mask cut out just the person?

it's not using the layer mask directly...

you have to either make a selection of the thing you want to cut out before you add the layer mask (that's what I usually do), or you have to paint on the layer mask with black to hide the parts you don't want to show up (I use this technique for details and cleaning up).
