Pumpkin bread, follow up 2

Made this recipe:www.cookingbread.com/classes/class_squash_bread.html over the weekend. VERY good. Better than the first recipe, in my opinion, but maybe I just liked the darker consistency and feel like any time I make bread in a loaf pan it doesn't come out but when I make it on the pizza stone it does. Haha, yes! Here's what I'll be eating for Thanksgiving! The lime-marinated jerk seitan is especially delicious. Mmm, gluten.

I also really enjoy a shepherd's pie-like dish with cooked spiced lentils, bread crumbs and nuts on the bottom and herbed mashed potatoes on the top. You can make a huge dish of this and people will just eat it up. Do a search on "lentil nut loaf" or "lentil shepherd's pie" to get an idea of the proportions/common ingredients and then go for it! Usually for Thanksgiving proper, my family just makes the lentil nut part and serves the mashed potatoes separately, but I often end up putting them together on my plate anyway. In any incarnation, however, it's really filling, easy to make, very delicious, and doesn't use any dairy.
