SHANNON’S BEEF EMPANADAS

Empanadas:
1 lb ground beef
1 medium onion, chopped
1 can spicy Rotel tomatoes, drained*
½ teaspoon of Oregano
½ teaspoon Cumin
½ teaspoon paprika
½ teaspoon chili powder
Salt to taste

*Canned tomatoes and chilis, can be found in canned tomatoes aisle of supermarket.

pie dough
You can use frozen pie crusts... I bought some the other day at Albertsons. They normally come with two pie crusts and you can just roll them out really thin cut them into 4" discs.

Heh, I doubt we could find frozen empanada dough discs anywhere in KC...but the recipe looks pretty righteous. :)

You can use frozen pie crusts... I bought some the other day at Albertsons. They normally come with two pie crusts and you can just roll them out really thin cut them into 4" discs.
