YourRestaurants has a list of vegetarian restaurants, most of which I haven't had a chance to visit yet.

Launceston:
Fresh is cute and the menu looks okay but I haven't eaten there yet. And they don't have a lot of vegan items. Burger Got Soul has a good selection of vegetarian burgers, and they are DELICIOUS. (And vegan without the cheese and mayo... The chips, however, are not vegetarian). The Terrace at the casino has a vegan chef, and the food there was amazing (pricey, though) except that he gave me honey in one entree. All the Indian restaurants are generally good for vegetarian food. Elsewhere in Launceston, I haven't had much luck, and I usually eat at home. Which is good for my wallet =)

I've had one stir fry from Shu Yuan in Hobart, and it was very nice and filling. I haven't been to any of the other Hobart ones.

Fresh is the BEST cafe EVER!. They have delicious vegan snacks and they have a good variety of vegetarian, vegan & GF goodies.

Mmmmm.
