You raise a fair point, maybe Cas only thinks he's God but exploring cas as God would be such a meaty storyline anything else would feel like a cop out to me.
I don't think Cas not actually being God will be a cop out - after all, he has immense power now, and I think an exploration of how that power can corrupt will be compelling...and very meaty!
But yes, the last thing we want is for Dean to end up having to kill Cas...nooooooo!
It'll be interesting to see how much power Cas actually has. Are we talking super-smiting powers or bend the laws physics and change the universe powers?
I WANT A GOD SHOWDOWN BETWEEN CAS AND ALL THE OTHER GODS. They're all 'ugh, he's so green, look at him running crazy on power, what a loser,' and Cas gets all defensive 'YOU LOOKIN' AT ME, BIATCH?!'

Personally, my take since Death said he was going to reap God and also gave Dean a great lesson on destiny is that Cas is not going to be the big bad of S7, but Death is while the boys do whatever they can to get Cas off his powerjunkie trip and keep Death (who knew this all was going to happen way back in the Chigaco pizza parlor) from reaping Cas.
And Sam will be the only one able to take on Death because he has his hell memories back and learned a few tricks. (something Death conveniently bottled up behind a wall).
