Hmm, that's an excellent question. Usually movie trilogies get worse, not better. See: Cube, Blade, Aladdin, Honey I Shrunk the Kids, Godfather, The Ring, The Matrix, Mission: Impossible, Neverending Story, Species,
But to answer your question, I would have to say Evil Dead. The first movie, to put it mildly, was pretty crappy. The last one, on the other hand, was incredible. The same is sort of true of Terminator, whose first movie was mediocre.
Also, I wasn't aware that the Riddick franchise WAS a trilogy, but apparently there's some animated movie in between Pitch Black and Chronicles. A movie which I won't be watching.
