Stuffed peppers! My mom likes to cook them first, I prefer to bake them raw so that they're not fully cooked. My mom does rice inside, but my favorite ever was corn pico de gallo, cheese, crumbled veggie burger (if you're an omnivore obviously hamburger would be fine), and the chopped tops of the peppers. I was very proud of how that came out and it was SO GOOD and fairly healthy. You can also put tortilla strips or whatever in them.

Pepper jelly!! Makes a great Christmas/hostess gift.

Roast them, peel them, then jar them.

I like the idea of pepper jelly, never heard of it!

I also agree that a jar of roasted peppers would make a cool gift, like when you really char them and then peel them.

STUFFED PEPPERS MMMMMMM. we fill them with pearl cous cous and cheese. add tomato sauce and italian sausage or salsa verde and chorizo. mmmmmmmm.

I mostly end up with green peppers for stuffed peppers but I love the red ones. omnomnom. I also like to put red peppers in chili but that's not really a summer food.
