So you have. But then we ate the cheats' version with the flaky pastry!

I miss you guys. I need to scrutinise my airpoints and see what I can do. I heard them announcing the first game of the Super 14 this morning, and suddenly thought: It's not right for me not to be there for the first April in three years. :-(

These look awesome! What would you serve them with? As much as I'd love to eat the whole pan of one of these in a single go, I'm trying to think of appropriate side dishes.

Thank you! I'm glad you like the look of them.

Tiropita I always serve in summer with a huge salad. Not a full Greek salad, because the last thing you need is more fetta, but one chock full of different lettuces and ripe tomatoes and crunchy cucumbers. Go very easy on the dressing, believe me you don't need it. In winter a really good tomato soup, again not one with cream or anything similar in it.

Spanakopita is pretty filling on its own, especially with a good chunky tomato sauce, or maybe with yoghurt (or both) if you're that way inclined. If it's cold and I'm feeling good and hungry then I'll serve it with roasted potatoes too (probably with lemon, oregano, garlic and olive oil). The fillo is light enough that it's not too much of a carbo load. It's not a diet food in any case.

I used to buy little individually wrapped packages of spanakopita from a cafe in Ann Arbor as a lunch on the run, but I've never made it myself. I'm looking forward to trying it!
