I hate white chocolate

I'm attempting to finish up a batch of about 200 chocolate truffles, which Patrick and I (with the help of some friends) are making for a Valentine's Day party tomorrow. Four of the six flavors (hazelnut, whiskey-vanilla, curry peanut butter, and bacon-rosemary) are dark-based. They get finished by dipping them in melted bittersweet chocolate. I ( Read more... )

Sorry to hear about that. I often have trouble w/ white chocolate, too. Though someone once told me that microwaving can often help, as opposed to stovetop heating...and the back of the Nestle white chocolate chips mentions crisco as a partner to it (rather than cream or olive oil).

Also, do you freeze your centers hard before dipping them? I talked to a truffle maker once, and she said that's how she keeps everything round while dipping. Maybe that'll help keep things going fast once you do have good white chocolate to work with (since it doesn't seem to keep a nice melted consistency very long).

Yes indeedy! Freezing was actually necessary to get some of the centers rollable. Guess I put too much liquid in the chai and vanilla-whiskey centers. They turned out a little lumpy, but still tasty!

In my experience, working with white chocolate is more of a pain than it's worth. Really. Try freezing your bases, and then heat your white RIGHT BEFORE you are ready to dip. Work super fast. Having more than one person working at the same time helps. And even then it's kind of a crapshoot...

Have you threatened it with unarmed rape? It's already rubbery, so STI's wouldn't be an issue. I mean, it IS white chocolate, and everybody knows it likes to sleep around, but if it already has a skin... I'd risk it. Oh, and don't forget to use sprinkles. Sprinkles mean it's a party!!

Bought better white chocolate, which we melted verrrrrrry carefully and only used for dipping the coconut-lime truffles. They actually turned out beautifully! I will try to get some pictures before they all get eaten!
