Found a marvellous tutorial for Photoshop on how to make a realistic starfield:

It was written for PhoSho, but the functions used were quite basic and if you know your non-Phosho image editor reasonably well you shouldn't have trouble translating over.
( my attempt - not quite Hubble-perfect, but it's quite convincing nonetheless! )
