I've only read the first of that series, fwiw.

What kind of owl? I worked at a raptor rehab center for a while, and it would depend on the owl. Great Horneds are scary smart, saw-whets are tiny, barred owls didn't strike me as terribly clever. I could also see some sort of corvid, since they've been proven to be extremely intelligent (facial recognition, passage of identification between generations, multiple tool use)

I'm not sure I can see Sherlock with an unsettled daemon - but then, I don't see him as innocent, just working from a very different set of reference points than everyone else.

Innocent isn't the right word. I think that the empiricism in Sherlock's way of interacting with the world almost precludes maturity of the kind that would have a daemon settle. The idea would be that working with John, and the developing relationship would result in a settled daemon. IT'S A METAPHOR FOR THEIR LOVE.

As to the type of owl... I talked to a friend who works with owls a lot (raptor rehab as well, actually), and she mentioned the Greater Sooty Owl, which wins points for the dark color.

1) I would read that like woah! I love the idea of daemons and Sherlock seems unsettled and coming from a completely different direction than everyone else. Would the not-changing be something he doesn't even question anymore because he has more important things to worry about, or does it bother him?

2) I adore your icon.

1. I'm going with the idea that he finds it useful to have a daemon who can (for example) change into a head louse and hide in his eyebrow when they're chasing someone. It also would make disguises much easier.
