I'm repeating what you've already heard. Grad schools are fairly flexible on the issue of late LORs. You'll likely hear from them when they've decided they don't want to wait any longer. As long as all of your other application materials are in, you're fine. Until the deadline has actually passed, I wouldn't bother accosting your LOR writer.

I think the deadlines exist just to make the students panic! Just assume he knows what he agreed to do and keep your fingers crossed. It's beyond your control and the schools know that.

Definitely wait. The deadlines are flexible for LoR writers. It's not unusual for letter writers to submit weeks late, without hurting the applicant's chances. They know this. Your schools know this. You'll be fine.

I wouldn't email him before, say, January 4th or 5th. Give him the full holiday break, then drop by with a gender reminder if necessary.
