Pumpkin & scallion stir fry

I used to sometimes eat lunch at Grand Sichuan in the East Village while I was attending NYU, and because I'm not much for the spicier ends of Sichuan cuisine, I often wound up eating a dish that involved stewed pumpkin, scallion, and maybe ginger. BAAACON. Sounds excellent in not vegetarian form :) When you come to visit, I have to take you to Blue Star Donuts. They cycle through different flavors throughout the day, but maple bacon and creme brulee are my favorites!
