We were grocery shopping tonight and bought an Arctic Char that looks like your fish. :)
I know yours aren't Arctic Char but it made me think of that. Usually, when we buy fish, they're just fillets or a tail (without the skin/scales part) so they could be any kind of meat. We don't usually buy them looking like what they were before death.
I love Arctic Char because they're larger like Salmon but they're lighter meat like trout and they actually taste like a combination salmon/trout. Plus, they don't have a lot of bones to pick out!
There were plenty o' bones, but it was so tender and flaky that if you were careful, you could just "fork" the meat away from them. Unk is a fine chef :)
I've never had Arctic Char (or heard of it, for that matter). If I'm ever there, let's have some!
I'd love to have some with you! However, if you ever get up this way, we'll just have to check to see if there is any. It isn't always available so that's why we snap some up when we see it. :)
I meant to add that I was getting some out of the fridge last night and moved something only to have a fish face staring at me. Made me jump a little. Heh.
I think I was a teenager on a vacation in Canada with my girlfriend's family the last time I went fishing. Don't let your Unk slather honey mustard on his fish. Trust me. Been there, done that.
Well done, Unk! Trout fishing is so relaxing! (So why haven't I done it for years?)
I guess it's hard to be a seafood person in Denver - you're not exactly close to fresh supplies!! MrsTroll and I practically live on fish. Actually one of our favourites comes in a can: smoked tuna.
We ate rainbow trout at the weekend. It's lovely! Normally with trout we don't do any preparing - just slam it on the grill with some herbs and lemon juice. Then after cooking, if you cut off the head and tail, it's easy to split lengthways so that the spine comes out gently, leaving all that gorgeous flesh. Mmmm!

Ant, this reminds me of your recent post about your visit to Pike's Market in WA. I've never been there but did you ever see the movie (I think it was simply called *FISH*) about that place? It is a kind of light-hearted motivational film and was quite hilarious. I saw it when I was at a professional development workshop a couple of years ago and was so impressed, I had it brought in for our first staff meeting last September, as a way of getting our school year off to a good start.

Ooooo - fresh fish! Yummy! and you didn't have to clean 'em yourself - even better! Tell Unk I'm jealous as I haven't been fishing yet this year and it looks like I may not get fishing this year. I'm looking at a calendar jammed until early October and by then the water up in Wisconsin can be mighty cold. Darn! I may have to pout.
