Oh, this looks great, and I LOVE Thai food, authentic or inauthentic, and am stymied by having no clue how to cook it. I presume I could also substitute the chickpeas for chicken also. Thank you!

You could substitute anything you like! If you're doing a carnivorous version I would suggest adding a dash or two of Thai fish sauce.

Btw have had a bash at the F words and have succeeded in producing utter childish nonsense.
