Bring on Your Pie Recipes

I'm on pie duty for Thanksgiving next week (no surprise).

I want to make an apple pie for certain. I was also thinking pumpkin, but I might want to change it up. Does anyone have any unusual pumpkin pie recipes they would recommend?

I'm also open to the possibility of a third pie - possibly pecan or wild card.

Thoughts?

Who doesn't love pecan pie?

I make a bitch ass apple pie.

You could also try a chocolate pie.

I'll take the Pepsi challenge with your Apple Pie anyday, ya hear? Yup. I said it.

I may embark upon homemade cinnamon ice cream. That might be the way to go.

Also, do you think I should get one of those Ponté knit dresses from Lands' End? If so, which one?

Possibly. I like the cowl neck. You might want to order a size down to be certain it doesn't look like jammies.

in NYC, everyone's bonkers about a salted caramel apple pie that a bakery does here. perhaps you may want to incorporate a savory element into one of the pies to jazz it up? also, there's a beautiful chocolate/caramel torte w/ sea salt at a restaurant in williamsburg called marlow & sons that really wowed me. can you play around with something similar?

The salty chocolate and / or caramel thing is big here as well. I like it, but it makes me a little nervous in my own kitchen. A colleagues wife who makes homemade caramels has been experimenting with salted caramel this year and the results have been horrid. I suspect it's one of those things that is harder to balance than one might think. Of course, there's always Google-fu.

My family isn't big on cheesecake. I have seen more than a few pumpkin pie recipes with cream cheese incorporated into the pumpkin, and I like the idea of a fluffier texture, but I think I would have to try it a different way. I wonder if I could do like a pumpkin french silk?

Pecan with chocolate and cranberry? You have my attention!

I've been thinking about flavors that I think might be good with pumpkin. Chai comes to mind, and I do find pumpkin chai pie recipes online. I wonder if pumpkin might be good with a little spice - like capsacin kind of spice - as I know it is good with chocolate and I thought that might be an interesting combination.
