I didn't think it was Eustace's dragon-ness but the fact that it heralded him not talking and being decent. His being likeable matched exactly his being a dragon, so people had to attach it to the physical part.
It's certainly that way in the book, but the trouble was he spent fully half the movie as a dragon. There were almost no scenes of him being pleasant and human at the same time. And I think there was a line somewhere like "I think I made a better dragon than a boy." And there's sort of the question of what they would have done in the unnecessary boss battle if they hadn't happened to have a dragon with them (not to mention pulling the ship). I think the issue was that, for Lewis, the relevant trope was "Dragons Are Evil", whereas for modern audiences "Dragons Are Awesome."
But yes, poor poor Pilot. Definitely my favorite character.
