Tonight I made a recipe I found on www.epicurious.com (my favorite recipe website).  After reading the book "Julie & Julia" by Julie Powell, I have been dying to make a recipe by Julia Childs.  Tonight's dinner was a success!  I added the carrots and onions back to the sauce in the end.  Bon Appetite!

I have so much love for roast chicken -- particularly the crispy skin.

There is another recipe called the "best damned chicken" that is quick and crispy. I'll post that as well.
