aw man...I made risotto for the first time last week and was decidedly underwhelmed by the results of my efforts. I'll have to try again at some point since I have this whole box of Arborio rice still. Your recipe looks like a good one to try. Thanks! I hope you're not always gluten free but if you are, looks like you'll have no problem at all with feeding yourself. Those dishes look awesome. I want to make the Chocolate pudding puffs. What's icing sugar? Is that confectioner's sugar (powdered sugar)? I want some!

I think I'm going to come up with a better recipe for those chocolate puffs by actually making gluten free cream puffs. Yes, it means confection or powdered sugar.

The first time I made risotto I failed. I over thought the whole process. As long as you're adding hot broth (keep it at a simmer or low boil) don't worry about amounts or timing. It may be done sooner or later. The risotto should have an al dente bite. Better to undercook than overcook. Keep trying it until it feels right. Also, keep stirring but don't get too crazy about it. relax and make it fun!

I spoke too soon! Looks like you had the technique down, but didn't like the flavor of the one you made. I think you'll be very happy with this recipe then.
