You should read American Gods. If you're looking for more than one book, it also has a sequel. If you read them, I'd love to talk about them with you. I have a lot of unresolved feelings about those books.
Can't really comment on the rest, but I'm obligated to pimp the Old Kingdom trilogy when someone is looking for reading material. It's one of my very favorites.

It took me 5 or 6 tries during various parts of my life before I finally got into Dark Tower. Almost everything Stephen King has ever written has ties back to the series (there's even a book about it). Personally, I don't really think that's his best work. I read the majority of the series, but the books got longer and longer and I don't think I finished the one before the final one (there's another book in the series out now, so I guess that would be 2 books before the last).
I read a large part of the Wheel of Time series too, but those books got so fricking huge and they had so many characters in so many different places I'd lose track of who was where. They'd mention Bob on page 2 and then you wouldn't hear about him again til page 500 and then not again til 1,203. The author died few years ago, but they've been finishing his remaining books. I think the final one in the series either just came out or will be shortly.
I liked American Gods, but I enjoy the majority of Neil Gaiman's stuff anyways.
lol I've read a Dresden Files short story and I liked it. It was part of a short story horror book with Charlaine Harris and a bunch of other authors. The problem is that my ex boyfriend is super into the Dresden Files and I might be like "omg this book reminds me of him *sads*" but when I get over that, fuck yeah, I'd love to give those books a shot again.

The things that Song of Ice and Fire, and Wheel of time have in common are all things like political intrigue, tons of characters and "epic" length and feeling. None of those things happen to be what *I* like about GRRM...I loved the strong character development, which I dont think Jordon puts that much emphasis on. So...just my 2 cents, but I couldn't get into WofT.
Dark Tower is interesting...odd...but interesting. worth a try, at least.

I second the above comment on The Dresden Files. Love, love love them. My current new book-infatuation is the "Lucifer Box" series by Mark Gatiss...really fun, so far!
They are mystery/secret agent suspense novels set in the 1920s, with a very charismatic, somewhat amoral goodguy/badguy protagonist. So. Much Fun. I am only on book one, but loving it so far.
I took a stab at reading the Dark Tower series years back but couldn't really get into it, but I do hear it's great.
Now totally out of left side and nothing like the books you mentioned but have you read anything by Terry Pratchet? I'd recommend all his books but the Witches Trilogy, love Nanny Ogg, is fantastic as is everything with Sam Vimes in it.
