Oh, I am such a huge fan of this plot! :D And I think you're hitting on Mai's relative naivety and Toph's brashness perfectly. I think it would be interesting to see Mai giving Toph some noblewoman advice re: running a country if the plot allows for it, given Toph's unfortunate situation. I'm not sure if Toph's education would be as precise as Mai's in regard to that.

Also, this line: "Altruism?" Toph asked airily. "That something you eat?" HILARIOUS XD

I like where this is going. Mai attempting a self-sufficient lifestyle and Toph there to push for it. This will be fun.

I'm loving the bonding, and also how you're playing on Toph's noblewoman upbringing and her sense of duty and responsibility to Omashu and its people even though she shouldn't really feel anything for it while still using her straightforward nature and sense of humor.

It's interesting, too, to see under Mai's tough exterior and getting the sense of her actual naivete about a world that isn't "Courtly." It's wonderful for her to be willing to learn, but I would probably agree with Toph-- and with the idea that Toph didn't have to learn it on her own, so why should she leave Mai to sink or swim?

What is it with Fire Nation nobles and assuming that they'll just do fine on their own in Earth Kingdom? Well... that leaves Mai in Zuko's company, again, but here the shoe fits. As much as I sympathize with her, she's known for at least half her life that Zuko (while cute) has fewer social graces than an angry turtleduck. This still makes much more sense in the long run than Mai suddenly liking politics/social interaction/just having Zuko as her friend (while sharing him with his job and his duty).

Mai and Toph are freaking adorable, though, and I love the entire thought process with Toph's umbrella and inability to admit defeat.
