I'm thankful not to be a baby any more, and I'm surprised they don't cry even more than they do.

Think about every tiny little thing that annoys you in a normal day but which you fix almost without consciously registering it: you have an itch, so you scratch it; your clothes are digging in, so you adjust them; you have something in your eye, so you blink it away; your leg aches, so you shift position. If you're a baby, you have no idea how to fix these problems, so they carry on getting worse unless someone coincidentally fixes them for you in the process of attending to your more obvious needs. Plus, as the commenters on the linked thread mention, you wouldn't have the emotional maturity to realise that these discomforts will pass and are not the worst thing in the world.

Yeah. Sophia can go from relaxed to distressed instantly, and then back again in five seconds of cuddling (or two seconds of food, if that's the issue). She has no idea of context, timing, or what is an unusual thing to be putting up with. She has no interest, for instance, in being changed - I assume that it's not actively uncomfortable, and so she won't complain. She'll complain more about having the poo removed, because it means a few seconds of cold air on her bottom.

I am looking forward to her developing these things. But there's no rush, I'm enjoying how she currently is.

Glad to hear it. I'd hope we're covered at work, but it's miles away from my areas of responsibility.
