I think you have to look at the overall cost of the meal out, rather than concentrating on individual elements. Does it matter if the mark up on wine is significantly more than the mark up on food if the overall night out was worth the money you paid for it?

But with food you're also paying for someone to prepare/serve it to you - I don't think marking up a bottle of wine six times its price is fair given all they do is pour it in a glass for you.

The mark-up on coffee or coke is way more than six times cost.

But still, I think, the question is was the £50 I spent on having dinner and a bottle of wine worth £50 (to me).

How the individual margins on components of the meal break down is of secondary interest. What’s the mark up on the laundry service for the table cloth?

If the mark up on the wine is “unfair” but the total cost of running the restaurant and a “fair” profit margin is £50 per cover then the margin on the food is going to go up, or the expected tip is going to go up, or you’re going to be asked to pay a facility fee for the table.
