The restaurant thing? It's about preferences, tastes & expectations. Sometimes I like a 'boring' steak & chips (it's predictable, comfortable, unchallenging, good), other times I like to be taken on a foodie adventure (it's challenging, broadening, exhilarating, good).

I like that there a diversity of places that suit different tastes, even those who view going out to dinner in the same way they view going to an avant garde play with audience participation. Ultimately, it's about whether their business model is viable. If it's too ridiculous, they'll be out of business before too long.
