This dish is really not difficult--just a little fussy, with the attention that needs to be paid to the alcohol evaporations and the risotto stirring, and the fact that part of the salad had to be just slightly cooked...but it was totally worth it.
I love risotto--I could eat it every day. And this one was remarkably hearty, considering there's no meat in it at all. I've never used vegetable stock before, and was pleasantly surprised at how nicely sturdy it is, especially blended with the mushrooms and cheese.
I love "Under the Tuscan Sun" ... one of my favorite "comfort" movies. :) I actually cry at the end almost every time when the water starts flowing from the spigot.
I chose that one off the Netflix list, and consoled myself with the idea that even though I was making my husband watch a chick flick, it has Diane Lane in it--and he never complains about watching Diane Lane for a couple of hours!
But yes, I think it's a great movie, with a great message--that your dreams can come true even when the right one doesn't come along UNTIL you're dreams come true, and, in the end, SHE was "the right one" all along!
I would have pulled out the chicken just before serving, stuck it under the broiler and gone on super hot for about 15 or 20 seconds, just long enough to glaze and crisp it. But I'm a whore for crisped chicken skin.

Thanks for the chicken idea. Next Friday Mariel's "special lunch" will be chicken wings, so Thursday night I'll do the wings inspired by that only with the end-of-prep glaze-crisping.
It started out as a "30 Minute Meal", but I thought, screw that, I have more than 30 minutes, and I'm not going to use the skinless, boneless pieces of chicken just for the sake of making it in 30 minutes. I just don't do the boneless skinless thing without feeling like something's missing. So the nice slow braise did manage to infuse the meat with that lovely juice all the way to the bone, and yes, you could totally flash the skin at the end and it would be lovely.
I have some leftovers, so we'll be doing this again this week as well...and I'm not complaining!
