Yeah, when I read strawberries+maple I had the same reaction, that it didn't sound like a good match. Strawberries and agave nectar would be good (I have that for breakfast every morning, with soymilk and frozen bananas, all liquefied in a blender, yum!). But hey, if it grew on you then great.

That ice cream looks SO good right now. I have an ice-cream maker from the '70s that I've used a few times. I'm not very happy with the consistency, though. The ice cream tastes great but is rock-hard. I don't know if it's the ice-cream maker, the ingredients, or that ALL homemade ice creams is like that.

I'm babbling.

The stuff gets pretty hard in the freezer, but we just set it out for about ten minutes before serving and it becomes pretty easy to serve and eat.

I was thinking that dates would probably be good as a sweetener for the strawberry flavor, and there are two raw strawberry recipes in the book calling for dates instead of maple syrup. I've never tried using agave at home before (I've just had it as an ingredient in foods I've had at restaurants) so I didn't think of it. It would be easier than using the dates, for sure.

That looks so good. I'm glad you like your new mixer. We have an old electric ice cream maker and I'm inspired to use it again soon.

I'm really curious, what does "Vice Cream" have in it? The ice cream sure looks like a great texture, etc.

I don't worry about using alcohol free flavorings. I can't find them and my vice creams freeze just fine when I use the flavorings that are alcohol based. The amounts used are so small that it doesn't affect how it freezes.

Thanks for that- I actually had wondered how such a small amount would mess up the entire batch, but I didn't want to risk ruining a whole pot of ice cream over it. With your testimonial, I'm likely to try it.

Yum! I have considered making a green tea ice cream. I might try to find a recipe on the web and see if I can modify it into a vice cream recipe. The strawberry looks divine. I may have to make some myself this weekend.

I think I used between 2 - 3 tablespoons of green tea powder. I kind of remember adding more than 2 because the batter wasn't the pretty green color I wanted, so that was probably my downfall. :)
