I'm imagining you single-handedly influencing the people of that small town to eat more vegetables, by opening a vegan food stand (and of course you wouldn't call it that!). And of course you could learn other skills and trades if you needed to.

When i was younger i thought a diner would be better, to create a sort of cool space where local youth could come and hang and not feel like they had to get moved along, but also have it on a highway exit so you could pick up travelers and truckers to give the crowd some more diversity... But now i think perhaps maintaining a space like that might be too much for me - you'd need to have wait staff and everything... Whereas the small "plastic stool" places that are popular in China, you only really need two people - one to cook and one to wait, and outside of busy times you can get by with just one. Over here in Colombia most of these places are a two-man show as well, where one person handles the money and the other one handles the food.

Childcare regs vary by US state, and I'm currently in one of the more draconian ones. The ostensible reason is to protect children from death or injury by "unqualified" providers, but death rates have not dropped at all since implementing the regs, but there are a lot more bureaucrats that have been hired to enforce compliance. Meanwhile, in immigrant and poor communities, there are still women watching 20 or so kids completely under the table, and nobody is the wiser until a house burns down. But my neighbor who is watching a friend's kids 3 days a week is technically breaking the law, though it's doubtful that she'll get reported.
