How awesome that you found good Cantonese food randomly in Panama!
Your description of finding a common language reminded me of when I was in Mexico and trying to use my tiny amount of Spanish to buy groceries. I saw a little counter-service Chinese food place in the strip mall where the grocery store was, and decided to get a meal to go and take it to the beach.
The woman behind the counter was entirely fluent in Spanish - but accented. My brain short circuited - I lost all my Spanish because she was Chinese - and apparently that confused me and I couldn't grok that she spoke Spanish. But! I knew that I was in Mexico, and that English was incorrect - so when I went to thank her, what came out was "Merci beaucoup" - because apparently my brain just defaults to French when I know "not English" but don't have the right language file loaded :D

The Peruvian potatoes are called papas a la huancaina. So good.
The patacones relleno look good. Glad you discovered ceviche. It is so damn good.
A lot of this food looks like the boring ass food I had in Colômbia. Glad you found some decent Chinese.
