Flavorful Quinoa

Ingredients:
  • 1 cup water
  • 1/2 cup dry quinoa
  • 1/4 to 1/2 onion, chopped fine, to taste
  • 2 to 4 tablespoons favorite variety of salsa, to taste
  • 1 tablespoon chili powder, to taste
  • 1-1/2 inch piece fresh ginger, peeled and grated
  • 2 cloves garlic, minced
  • 1/4 teaspoon cayenne
  • handful of spinach or kale, chopped
  • splash lime juice
  • pinch salt (optional)
Directions:
  1. Combine all ingredients into medium sized pot.
  2. Stir well and bring to boil
  3. Cover
  4. Reduce heat to low
  5. Cook for approximately 20 minutes (until quinoa is fluffy and there is no remaining liquid)
  6. Top with favorite veggie stir fry or enjoy as is
Makes two servings
Preparation time: 5 minutes
Cooking time: 20 minutes
