Ingredients:
- 1 cup water
- 1/2 cup dry quinoa
- 1/4 to 1/2 onion, chopped fine, to taste
- 2 to 4 tablespoons favorite variety of salsa, to taste
- 1 tablespoon chili powder, to taste
- 1-1/2 inch piece fresh ginger, peeled and grated
- 2 cloves garlic, minced
- 1/4 teaspoon cayenne
- handful of spinach or kale, chopped
- splash lime juice
- pinch salt (optional)
Directions:
- Combine all ingredients into medium sized pot.
- Stir well and bring to boil
- Cover
- Reduce heat to low
- Cook for approximately 20 minutes (until quinoa is fluffy and there is no remaining liquid)
- Top with favorite veggie stir fry or enjoy as is
