Yeah, American's don't eat beets very much, except in a highly processed form known as "refined sugar"... Beets are sometimes served as a salad garnish, however. Here is an example I found in a local grocery store.
The term "phat" means "cool" in urban slang but also sounds like "fat" of course, so the product name is supposed to be clever. This company also sells spicy pickled green beans labeled "Mean Beans."

Вегетарианский is usually about food. Растительный is referring to plants that include vegetables too.
