I made Minestrone with this recipe but with doubling the veg and wine, using canned tomatoes and jarred garlic, killing off the veg stock because it doesn't need it, and eliminating the pasta. It was LOVELY, though I'm not going to use the olive oil anymore; it doesn't need it and it just floats on top and looks icky. I will either steam the veggies in their own liquid or saute them in the wine.
