for your information, that the french word "provençal" (or italian, provinzale) is sometimes associated with aoili, does not mean it is "provincial" in the english language's derogatory sense. in southern europe the term simply means far from the seat of government. that often meant in the area where rich people had their vacation homes. that was true both for aoili (italy) and mayonnaise (spain, probably).
besides, the way mayonnaise is made now, it could hardly be said to occupy a position of cultural superiority to aoili, which is almost always made fresh on the spot.

I'm all about refined, and aioli is the bastard, provincial cousin of mayonnaise, but you can't beat garlic and olive oil.
(Except, I guess, you have to beat the hell out of garlic and olive oil to get aioli in the first place....)
