This recipe is one of my favourites - it is tasty, easy to make and perfect for Christmas in a climate where the temprature is easily in excess of 33 C or 91F when people are gathering to eat. Best of all, it can be made in stages and is easily transportable. All this adds up to a versatile, delicious centrepiece of a main meal

It wasn't the Christmas I was hoping for, but I am pleased we managed to salvage it. Bitter sweet, really, melancholic...as I realised those days were done and a new phase stretched before us...and I wondered, would I be able to create a new family tradition to fill the yawning void???
