I haven't been able to find a specifically Japanese grocery that's within walking or public-transiting of MIT, but I probably just need to ask around. I went to the Super 88 the other day, which seems to mostly do Chinese, but also I could have just not been paying enough attention.
I'm semi-quoting Shizuo Tsuji there: "many substitutes for dashi are possible, but without dashi, dishes are merely `a la japonaise' and lack the authentic flavor." Miso is different, yes; I happen not to like it as much, but *shrug*.
