Sounds tasty! I've been on an eggplant kick too lately.

I do this too!!! I made a delish dish for Christmas eve!! I dipped the eggplant in egg substitute, and then in whole wheat bread crumbs. I baked them on a cookie sheet on both sides... then I layered them with COTTAGE cheese and sauce... topped it with part skim mozzarella... It was sooo good! Everyone lived it!
