I like paladins - I roll them all the time
I roll them for my supper and I roll them for my lunch
If I rolled a hundred paladins, I'd level them at once!
(But hey what do you think about resto shamans?)

(I love them. I'm leveling my 2nd one right now. It's hard for me to cap them out because I lose interest in the random asshole dungeon finder after a while, but gahhh resto shaman healing is my favorite.)

I've never actually leveled a hunter out of 30, but hunters can be a really fun class to RP since you don't have to really go a certain direction with them. Paladins and Death Knights you have a pretty set in stone idea of what your character is going to be, a pre-laid character agenda, so to say. All DKs have to nom faces and all pallys (ally side, at least) have to be the good guys or at least think they're the good guys. Leastwise that's how it looks to me.
Hunter's have more flexibility as far as what they can be.
...But that character you described sounds really cool. SO CLEARLY YOU NEED TO ROLL BOTH! :D
