Yum. (+101/1001 Update)

So these crepes are actually quite surprisingly good. (I did all-purpose flour crepes, though. Fuck whole wheat. Also added a little sugar. And used cottage cheese instead of ricotta.)

Sadly, they are not Meagan-friendly. Any lactose-intolerant/vegan folks out there who have a good substitute for the ol' curds and whey?

Just lactose-free milk (lactose-free cow's milk, not soy or rice) would probably work fine, as long as Meagan likes it. (There's the odd lactose-intolerant person who doesn't, and prefers to drink soy.)

*nodnod* We have soy!cheddar :) But I don't think the crepes would quite survive that... ;) Maybe soy ice cream as a substitute, but that kind of loses the healthy aspect of them.

Hmm, those crepes do look excellent. I think it's Brian's turn to make breakfast tomorrow; I'll have to see about getting him to try making them.
