I have been learning things about bread!

If you are an experienced bread baker, most of these things will probably not be news to you. Some of them are not /recent/ news to me but I still find them interesting.

What I have been learning recently is about tenderness, crispness, and longevity.

Om nom nom nom fresh-out-of-the-oven bread. And melted cheese. Mmmmm...

... you manage to keep home-made bread around long enough to go stale?!?

2 days? Yes.
French bread goes stale /fast/
Also, dieting.

I think I would have to give up baking if I were serious about dieting. (As it is baking is mostly limited to when there are people to share the results with.) I am impressed by your self-discipline!

Bread pudding? Croutons? Strata?

It if goes truly sadly stale before we finish the heel, it'll get saved for bread pudding, probably.
