Box Mix Apple Spice Cake Cupcakes

Today I'm trying to salvage some more of this year's apple crop and so I hauled out the juicer extractor and am making apple juice with some of the windfalls. It's a bit dismaying how little juice and how much discarded pulp the extractor produces, so I'm also using some of that leftover pulp for another go at apple spice cake with a box mix. Yep, very well, if I do say so. First batch is out of the oven now, and they are nicely moist and springy. Maybe a bit sweeter than necessary. Next time I may just melt the butter so I can skip the added sugar. I may skip frosting them after all -- they're much easier to transport without, and between the moist and the sweet, they don't really need it. I dub them muffins.

BTW did you get coverage on the pages? (I had house guests, and that and the crippling heat has made me s-l-o-w-)

Yep, I was quite pleased. I'm not the hugest fan of apple pie, we don't eat apple sauce much, and the fruit is too bruised or wormy for just munching apples, (Next year, I will spray. I swear. I'm tired of wormy apples.) so I'm particularly pleased to have come up with a use for them that doesn't involve letting them self-compost into the yard.

I did find a couple of alpha readers yes, but if for some reason you're willing to give the chapters a quick eyeball, I am not stupid enough to turn you down.
