(and the biryani looks really nice - might give it a try. How finely does the meat have to be chopped? And do you think I could get away with using a rice cooker instead of a pressure cooker?)

Hmm ... 'k, if you're using chicken or bird stuff, then use pieces like the leg piece, I mean sort of sized like that. If you're using red meat, then cube it, say roughly, very roughly, one and half inch-ish by same dimension cubes. A little bigger is fine too
Pressure cooker isn't essential, just use a covered container where there'll be at least 1/2 of the volume available for proper cooking of the whole set up following the final mixup ... You know, if you've ever made jambalaya, that's the principle
You can leave out meat and make a fully veggie one too, if you like
Or try salmon pieces
Or gouda cheese pieces, that'll be panir biryani, but these will be small pieces, half inchish ...

That biryani recipe sounds gorgeous - and we have a rice cooker that does our rice on a regular basis, so I might try putting the whole glorious mass in that and giving it a go... Thank you!
