Raising a boy and a girl is an interesting study in how human beings get gendered. I think you are right that there is a contradiction between how “inevitable” gender supposedly is, and how hard people work to enforce it.

Not bad. Another avenue of head to toe description of a person’s “sex” is to burden with an obligation to advertise their genital state as described at birth by adhering to groups described as such. To then wear the clothes, maintain the looks and do the deeds of corresponding 2 genital descriptor groups, all to let selfish lusters size you up for treatment without reward for your effort, no matter the personal cost you may endure.
