Whole30

I've decided to start the Whole30 program tomorrow. This is a mostly-paleo dietary cleanse that eliminates most problem foods from your diet for 30 days. Woooooooo! I'm so glad to read this! I'm sure the Whole30 will make you feel tons better. Going Paleo has made major changes for me health-wise. I hope this will help you, too.

I need to get my kefir grains out of storage, too...and I also hope they survived. Poor wee things. Thank you again for sending them!!!

My pleasure! Thanks for the paleo books, although I must admit that I kind of forgot about them. I need to go back and read through them all!

I did really well Day 1, but I totally crashed yesterday. I'll try to do an update soon. I'm enjoying it, but I'm glad I made 'emergency food' since I was far too tired to cook anything yesterday. There are a ton of great recipes I want to try. I just need the time & energy to do so. But I'm really liking some new food combinations that I never would have thought of on my own. I eat pretty healthily anyway (mostly), but I guess I have my food 'ruts', and this is definitely breaking me out of that!

I've done both an elimination diet and a paleo diet in the past. Neither of them proved to help me lose weight or give any insight into my health but they did add a bunch of healthy recipes to my favorites. I hope you get out of it all that you are expecting to.

Sorry I missed your comment! I've felt such a drastic change in my weight and overall health. I'm sorry you didn't! I've had so much more energy, drive, and food just tastes better without eating so much processed stuff. I am kind of stuck in a recipe rut though, so if you have any favorites, please share them!

I am so happy to hear how great this has been for you. I think part of it for me is that my diet never really did contain too much processed food. I used to post recipes a lot but I haven't in a long time.

This morning I made a kale frittata that was easy and delicious. In an ovenproof nonstick pan, Sauté a chopped onion, add a bunch of chopped kale, sauté until wilted, season with black pepper, whisk 8 eggs and add to the pan, swirl around to cover evenly. Cook until edges are set. Top with about 1/3 cup Parmesan cheese and stick in a 400 degree oven about 10 minutes. Yum!

I love frittatas! Josh is surprisingly big on them. I have to make them the night before though, or I just don't have time in the morning. So I've made a couple to get me through Whole30 breakfasts, but usually we actually have them for dinner. Short on eggs right now, but I think another one should come up soon! I have kale, too.
