And yes, she (as well as the kid) is your cousin. She's your aunt's granddaughter. Her mother (Carol?) would be your first cousin, so if I learned this correctly, you and Elisa are Rachel's first cousins once removed (and vice versa), Amanda is her second cousin, and her son is probably your first cousin twice removed, since he's three generations down from the sibling relationship and you're one generation down. "Cousin" will suffice for all but relativistic speeds, however.
