I moved from NJ to VT when I was much younger, but my parents still live there. Your boyfriend is right that the economy is a lot better there. The communities tend to be more close-knit, so it's better to find work by word-of-mouth. Also the cost of living is a lot lower, not to mention that VT has universal healthcare. If you do have trouble in VT, you can always come back to NJ. They're not that far from each other, so the cost of moving is probably minimal. While I do think VT is a viable idea, I highly suggest you spend a few days there, or a couple weeks if possible, to see what it's like if you haven't been there already. I actually can't stand living in VT because it's too isolating for me. But I know plenty of people, including my parents, who love it.
I think in your case, it's clear that you need to change your situation somehow. Your boyfriend and you clearly aren't happy with it. If you decide that VT isn't an option, you can see if there are ways to approach your job search differently.
