Does anyone here have issues with planning meals? Deciding what to eat is a daily challenge for me and I often miss meals or eat all snack food instead of a "meal". I want to get better at it but I have a hard time cooking and deciding what to do with with what I have because most recipes are complex (or they seem that way to me). I guess what I'm trying to get at is that I would really like some simple recipes that I could make. Maybe everyone could suggest a simple recipe? I'm a vegetarian, but feel free to list any simple recipes since this may be helpful for other people too.
I often eat "beans and rice", where I buy mexican rice mix in a box, add a can of black beans and a can of stewed tomatos and top with cheese and sour cream. That is pretty much the extent of my cooking. I've also gotten good at just buying a bag of potatos and slicing them up with onions and frying them with olive oil- it's a great alternative to french fries.
OKay maybe this post is completely random and a dumb idea, but I don't know. Anyone????
