autumn food

Does anyone have any recipes for warm, autumnal comfort food that's also vegetarian? Particularly with vegetables like broccoli rabe, escarole, and kale? I dislike cold salads for dinner but I still want to eat green things. I like digitalemur's Cincinnati chili recipe, too ( Read more... )

In the fall I love roasted root vegetables, sauteed broccoli rabe or brussels sprouts, and kale in soups (ideally with potatoes or yams).

Recipes plz? I am seriously not a good enough cook to run with ingredient lists.

I was sort of considering a kung pao-like concoction with roasted pumpkin chunks, sauteed escarole, peanuts, and $something, but I am not feeling confident that I know how to prepare the pumpkin or the escarole. I would give up a toe or something to be able to make proper sauteed broccoli rabe.

Oh, um, I just ask Google for help when needed, and play it by ear elsewise... and unlike folks like Catherine, I don't think I can be trusted to remember what I do and how I know whether it's working! Epicurious.com, mentioned below, tends to be decent for recipes. I'd recommend trusting them over trusting me.

I think you can't really do *proper* sauteed broccoli rabe without a wok.

Our family makes lots of stews, but I don't know that I have exact recipes per se.

Kale chopped finely enough goes well into a curry with chickpeas or other similar beans, carrots, bit of onion, chunked potatoes, sliced celery, vegetable stock and whatever curry powder or paste you can lay hold of (Patak's of the UK makes a good brand).

That sounds really good. So good that I may need it for dinner tonight, or soon, anyway. I'm bad at spicing Indian food, though, and really want a recipe to start with (see above.)

The great thing about using curry-paste-in-a-jar is it already has all the spices you need :-D

Epicurious.com has got loads and loads of recipes. :)

I found a root vegetable pie with rosemary biscuit topping recipe there today that's on the short-list of things to make soon.

Acorn squash! Cut them in half, clean them out, lightly coat the meat in some butter, fill with some brown sugar and maple syrup. Bake in a sheet with a bit of water (might need to trim the bottom sides to make sure they don't roll too much) until soft.
