"Plushie" for me is specifically a plush model of something like an anime character. It's hard to say exactly where I draw the line, but I definitely don't use the word interchangeably with "stuffed animal."

I would definitely agree with that definition, but I have heard people refer to stuffed animals as "plushies," so I figured I would include it.

For some reason I say "plushies" or "plush toys" more now, even though what I mean and what I grew up saying was "stuffed animals". I guess because "stuffed animals" started to take on a taxidermy-related meaning for me at some point.

Apropos of nothing in this post, you might enjoy this vid about the angels as a family. I think it's really cool.

We said "stuffies", when I was little.
Now, plushie is usually something fandom-related, and stuffed animal is general.

I use "plushies" more than I used to as a kid (and, as mentioned above, more frequently in a fandom context, or if they're handmade), but "stuffed animals" is still my usual.

"Plush toy" is a different beastie than a stuffed animal -- at least, that's probably how I would use it, although I'd know what someone meant if I heard it. I think of something hard, probably plastic, with fur.
