I quite like Athan Maroulis & Rhea's Obsession's recording of We Three Kings. Also Art Garfunkel & Diana Krall's cover of Morning Has Broken, Scarlett Johansson & David Bowie's cover of Falling Down, Yula Be'eri and Jack Terricloth doing Captain Sensible Calling, and pretty much any Simon & Garfunkel - Benedictus and The Dangling Conversation are the two that leap to mind immediately.

There's also a live album of Trent Reznor and Peter Murphy doing NIN and Bauhaus songs that's truly epic, but I don't think it'd be to your taste.
