I have read Easwaran's translation of the Bhagavad-Gita and was impressed by both it's readability and the extensive commentary that was included. I have no fear of recommending his translation of the Upanishads for me based on my previous experience with him.

I agree with this. I've read Easwaran's translation of the Upanishads and I highly recommend it because it was a pleasant read, and the commentary was excellent.

I also have the penguin edition of the Upanishads which I found to be fairly good as well. So, I guess it is up to you what you pick.

I quite enjoyed Easwaran's translations of the texts, and if memory is correct, there's a 3-book set with the Bhagavad Gita, the Upanishads, and the Dhammapada.

You might also try asking in the linguaphiles comm, people ask about obscure languages and dialects there all the time so I'm sure there are a few Sanskrit readers there.
