Is it only the dead of Nuadoria that walk here or might our poor characters see familiar lost faces?

Some of the childs/monsters are shapeshifters and have the ability to take a form causing strong emotion to the characters. Here, it's grief, so there's a definite chance they can/will see lost faces, even if they've not been in Nuadoria before! But that's ultimately up to you to decide C:

ALSO. Can the shapeshifters imitate the lost loved one in personality, or will it basically be the face of the dead friend going "blargh come to me"?

They can imitate their personality! The main objective of them would be to split the entire group of characters up. They might eventually turn and attack them once they get a character or two alone even while retaining the same form.
So be prepared! :D

Okay, so. Say the character is talking to a lost loved one or whatnot, and it's while the device is recording. Would the viewer see/hear the person them as the character does, or will they just see/hear some arbitrary figure of whatever the shifter normally appears as?

they'll see it as the character does since it's not really a hallucination so much as the shapeshifter actually digging into the mind of the character for a suitable form. BUT, shapeshifters themselves can create hallucinations so while a character may see 5, on the recording other people will see just on transformed shapeshifter.
